I updated my 101 Things in 1001 Days list to more accurately reflect my progress.

I made the Chicken with Creamy Chive Sauce tonight. Tonight’s meal was signficantly better than Monday’s. Edamame with salt- simple and delicious, orzo with a bit of butter and toasted almonds has a surprising amount of flavor, and then the creamy chive sauce was pretty good. I didn’t follow the instructions exactly…I browned my chicken then baked it especially since one piece was huge. The cream sauce wasn’t really creamy, just thick…which isn’t necessarily bad. It’s mainly low sodium broth, lowfat sour cream (just 1/3 of a cup) and white wine. So, all the creaminess comes from the 1/3 cup sour cream. I love the addition of the shallots- they smelled fabulous.

UT is making me angry. Despite accepting my health insurance waiver back in August, they have decided to deny it- and Jimmy’s. We got an auto-generated e-mail at 11:30pm tonight. It doesn’t give any info as to *why* we are all of the sudden being denied. I double-checked the waiver criteria, and we are fine. I can’t check anything online, I have to call the school’s health insurance company (which seems biased and just wrong) to find out why tomorrow. I am a giant stress bubble about these things, so I’m not going to be able to sleep tonight, thanks UT.

      I think most DZP’ers consider it an honor to have their goals stolen, lol! Most of the listmakers I know stole quite a few of their goals from other lists, myself included!

    Urgh when I graduated from college I had to get on the school health insurance because I was too old to be on my parents, wasn’t married yet and hadn’t landed a job. It was a disaster. They completely ripped me off. Long story… but I feel your pain. Hope you get it all figured out!

      Yeah, its a big rip-off, which is why we have a outside health plan (made for students). It costs half as much. Fortunately, it turned out just to be a glitch that went to a bunch of people and they retracted it today, and took the bill off my account….whew! I am so relieved now. 🙂 Still angry at them for ruining my evening though. :/
