Chow Mein Noodle Casserole

Dinner tonight was my Chow Mein Casserole. A delicious recipe inspired by one I found on…it’s that basic recipe with several changes. It’s way tastier than it sounds (and looks).


1 lb Ground Turkey

1 cup cooked white rice

2 cans of Cream of ….. (you can use whatever you’d like, I tended towards cream of chicken and herb; or cream of mushroom)

Handful of shredded Carrots

1-2 Chopped Onions

2 Cans Sliced Water Chestnuts

Handful of Slivered Almonds

4 Tablespoons Soy Sauce

Ginger to taste (1 tsp? I don’t know, I just kinda throw it in)

Chow Mein Noodles (at least 5 ounces, though more is better)

1) Cook up rice.

2) Cook up ground turkey and onions (individually or separately; I go back and forth).

3) Preheat oven to 350.

4) In a large baking pan, (at least 9 by 12)…grease bottom, add meat, add onions.

5) In a bowl, combine rice, soups, almonds, carrots, water chestnuts, soy sauce, ginger…and anything else you want to toss in…celery, bamboo shoots, etc…if you find something that works well, please let me know.

6) Pour mixture on to meat/onions.

7) Top with Chow Mein Noodles

8) Cook for 15-20 minutes (til noodles start to turn darker).

Both Jimmy and I love this recipe, it’s a nice change from the normal chicken or pasta meals. đŸ™‚
